Weeknight Cooking

People, it’s Tuesday and I have cooked 2 nights in a row! I know, that probably isn’t a big deal, but in this house, with a 1 year old that suddenly always wants to be held when we’re in the kitchen, a hot cooked meal is huge!

Now, for my favorite kitchen gadget that made tonights meal possible: the handy dandy crock-pot.



Tonight I tried a new recipe: Honey Sesame Chicken.

Here it is on a hill of rice


I give it a 6 out of 10. My crock-pot cooked the chicken so well that it shredded when I took it out with a fork. Also, there is just something about authentic fried rice that I have yet to replicate. I tried cooking it with an egg, but it just wasn’t the same. They must have some special spice or something.

The recipe made plenty for Stephen and me to have a plate for dinner, and enough leftovers for me to munch on it for the next few days.

Has anyone else made anything new lately? It’s not often I break from my staple recipes (tacos, spaghetti, enchiladas, chili, and burgers), but it was a fun and tasty adventure. Oooh, maybe when Sarah is older we will have culture nights where we make foods from different countries. That would be so fun! Remind me of that in 5 or so years, okay?!!


Tonights meal was made possible because of Sarah taking 2 great naps today, so thanks kiddo.

  1. Try frying the rice in Sesame Oil, and don’t add too much soy sauce – I’ve found that makes it taste a bit more authentic, but I know what you mean about some elusive seasoning…I’ve felt the same thing. :) I love my crock pot too!

      Thanks for the tip, I will definitely try it out! Ya, I tend to avoid soy sauce too, it always seems to overpower.
      Crockpots rule!! Whatever did women do without them ;)

  2. Only a 6 out of 10?! What was missing? It sure LOOKS tasty enough… Some diced up jalapenos coulda kicked it up to a 7, and a little witch’s breath mighta taken it to an 8…

    Noel says a few chewed up lizards woulda put it off the charts at an 11… I disagree…

      Noel is crazy, lizards don’t go with rice, they’re more of an on-the-grill kinda dish.
      I think it needed a bit more salt and less honey, that might have kicked it up to an 8. Overall, better than buying takeout. That junk is pricey.

      My friend Nicole taught me this trick: Fill the crockpot with water and soup, turn on high for 30 minutes or so and then empty out the water and do a quick wipe/rinse, and you’re done!
      It’s so easy it made me like my crockpot even more than I already did! :)
